I love these!
angel squares
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs 1 egg and 1 egg yolk
  • 1 teaspoon Coconut extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 egg white
  • 1 cup firmly packed brown sugar
  • 1/2 cup chopped pecans
  • 1/2 cup shredded coconut
  •  Cream shortening and sugar. Add the whole egg and egg yolk. Beat thoroughly.
  • Combine dry ingredients. (flour, salt, baking powder)
  • Add 1/2 the of coconut extract to shortening mix. Stir. Then add dry ingredients.
  •  Spread mixture about 1/2 an inch thick in greased 7 x 11-inch pan.
  •  Beat egg white until stiff. Add brown sugar gradually, and beat thoroughly. Add the other half of the coconut extra.
  •  Spread this over the first mixture, and sprinkle with pecans and 1/2 cup sweetened coconut spreads.
  •  Bake at 350 degrees (180 C) for 25 minutes. Cool and cut into squares.

 Yield: 2 dozen
