Lemon Buttermilk Bars
- 1 box (18.25-ounce) boxed lemon cake mix
- 4 large eggs
- 1 1/2 sticks butter, melted divided
- 3/4 cup buttermilk
- 1/4 cup lemon juice
- 1/3 cup sugar
- 1 tablespoons grated lemon zest
- 1-2 tablespoons powdered sugar
Preheat oven to 350 degrees F. Spray the bottom only of a 13×9 inch pan with non-stick spray.
Reserve 1 cup of the cake mix, set aside.
Place the remaining cake mix, 1 of the eggs, and 1/4 cup of melted butter in a large bowl. Blend for 1-2 minutes with an electric mixer until well blended. Press into bottom of prepared pan.
Mix remaining eggs, buttermilk, lemon juice, remaining melted butter, sugar, and lemon zest in a medium bowl with electric mixer until well blended. Add the reserved cake mix, beating for 2 minutes. Pour over prepared crust.
Bake for 35-38 minutes, until just set and lightly golden on top. Transfer to wire rack and cool completely. cut into bars and sprinkle with powdered sugar.
