Chocolate Marshmallow Bombs
- 1 stick butter, softened
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semisweet mini chocolate chips
- 1/2 cup mini marshmallows, frozen
Preheat oven to 375 degrees F.
Beat butter and sugar until creamy. Beat in egg and vanilla.
Add flour mixed with cocoa powder, baking soda, and salt and beat until blended. Stir in chocolate chips.
Shape dough into 1-inch balls around a few marshmallows, pinching ends of dough to enclose marshmallows completely.
Place 1 inch apart on ungreased cookie sheets. Bake 12-15 minutes, until set. let stand 2 minutes, then remove to a cooling rack and let cool completely.
